Description
Poblano pepper (in Spanish chile poblano, “Puebla pepper”) is a variety of the capsicum annuum species. Its fruits are large (7 to 15 cm long by 5 to 8 cm wide) and low in capsaicin, making them relatively mild (1000 to 1500 on the Scoville scale). Dried, the fruit is known as pimento ancho (chile ancho, “broad pepper”). Poblano is commonly used in Mexican cuisine, particularly in the state of Puebla, where it is used fresh (chile relleno, chiles en nogada) or dried.
