Capsicum Annuum. The name costeño refers to a variety of peppers grown on Mexico’s east and west coasts (the word means “of the coast”). This one comes from the coast of the state of Oaxaca, in the southwest of the country. Milder than the red costeño, the Oaxaca pepper is used to prepare the rare mole amarillo (yellow mole). Its delicate, fruity flavor, with hints of citrus, lends itself equally well to a variety of vegetable dishes, meats and sauces. Up to 2000 on the Scoville scale.
